Leek Rice


Do you like simple meals? Leek rice is a simple dish. It is easy to make. It is nutritious. And the ingredients are 100% plant-based. 


Simplicity: easy

Time-Consuming: 35 minutes 

Taste: salty

Recommendation: at my home, this leek rice was a hit! so you may double the recipe to have leftovers to take to work the next day. 


Ingredients: 

1/2 cup extra-virgin olive oil (for this I recommend Greek-style)

3 leeks, chopped

1 garlic clove, chopped

1 cup, basmati rice

1 cup cherry tomatoes

2 cups water

Salt (I used Himalaya Pink Salt)

Black pepper


Steps:

1- In a large, wide pot, heat the oil over low heat. 

2- Add the leek and sauté for 10 minutes. Add the garlic and stir to coat in the olive oil. 

3-  Add the rice and stir to coat. 

4- Stir in the tomatoes, water, salt, and pepper. Bring to a boil.

5- Reduce heat. Cover. Simmer for 25 minutes. Until the rice is tender and all the liquid is absorbed. 

6- You may drizzle with olive oil before serve.
